It has been a while since I had a mental health day and I can&#8217;t recall the last time I needed one more. I spent much of today under a throw blanket, sipping tea, by a beautifully scented candle that smelled like an herbal apothecary. While watching what is quickly becoming my new very old favorite tv show. <!--more--><\/p>\n<p>We no longer keep streaming services. We have The Great Courses, NASA tv, PBS, Finnish networks, and the library. I hear tell, a certain network that canceled a comedian to please an orange man, has a show coming up to talk about the stock market. I won&#8217;t be watching. I no longer welcome this network into my home. I have this thing about companies that double dip in relation to payment. I pay with one of my favorite comedian&#8217;s job and the jobs of his entire staff, my freedom of speech, and finally my personal integrity. Some call it cancel culture. I call it not paying 3 plus times over for what should only cost me in dollars and cents. Free speech is beyond value, and they have taken it from a comedian. What they do to one they set president to do to any and all, as we are all equal. <\/p>\n<p>Who wants to watch about a giant casino built on magic math anyway. Especially given how it is far from reflective of the average person&#8217;s circumstances and situation. It is not reflective of what is happening in the jobs market or pretty much anywhere else in our societal economic and function system\/s. I am a homesteader. Homesteaders, understand systems are connected to each other. Something is deadly wrong when you don&#8217;t see the the effect of one part of the system on another. This is how we know something can&#8217;t be working properly or in line with the natural laws that ultimately will assert themselves. So I am really not interested in hearing people talk about the stock market, as all they are talking about is rich guys doing magic math to the detriment of the masses. Reality will happen, because it is real, and magic can not impact reality because it doesn&#8217;t actually exist. It seems a no brainer to me , that when you bet on a thing built of fairy dust and happy thoughts,\u00a0 inevitably it will crash land in the sea where Never Land would be. If it weren&#8217;t a magical child&#8217;s story. One way or another casinos built on magic math disconnected from main street sooner or later will not end well. It is a law of the universe as much as the second law of thermodynamics is. So I will not be watching. Nor will I be paying for &#8220;service&#8221; from a network that demands payment in jobs, free speech, and integrity, and then again in additional advertised price in money..\u00a0\u00a0<\/p>\n<p>We tend to think about money as the bottom line. We consider everything based on what it costs in dollars. But some things&#8230;. Are worth more than money. In addition to money, we are paying with things that are priceless. I am now taking every opportunity to point this out. I don&#8217;t think the bill reflects the true cost to society what keeping these streaming services and big tech and social media companies actually cost us. I think these additional things we pay, such as monetarily the price of gas, and food, a direct result of these companies supporting a man who started a war with Iran, have value. They deserve to be a part of what we think about when we choose where we spend our time and money. I am talking about the jobs many can&#8217;t find, the impact of tariffs on everything, the cost of gas, the value of privacy, and freedom of speech, our neighbors who do not deserve to be put in alligator concentration camps. The destruction of our children&#8217;s education, and more. All these are the price of using big tech social media and streaming services. What are these things worth to you? The time to ask yourself this question is here. Why should a company be able to charge you so much, and take from you so much more than just dollars and cents? It has been around a while now, I however, never saw it. I have been laughing myself sick watching this nutty cast of characters. It has been highly entertaining. To everyone involved with it&#8217;s creation, thank you! This is exactly what I needed. A trip to the weirdest fictional(?) town in Alaska, from my sofa. It has been a cozy day. The yuchy weather created a hygge vibe. There was no reason to do anything in the garden as it was taken care of by the sky&#8217;s tears. All that was necessary was caring for the goats and chickens. The weather has given me a bit of peace and\u00a0 the beginning of the regeneration my nervous system needs. It gave the goats a headache though. Goats do not enjoy water falling from the sky. They too mostly stayed in like me. Toby, was the only one not deterred by the grey sky and the wet.\u00a0<\/p>\n<p>The rain also gave me the opportunity to make a very nice dinner. I roasted root vegies. Comfort food. Wholesome, and sufficiently heavy.\u00a0<\/p>\n<p>Tools: <br \/>\nmedium sized bowls<br \/>\nKnives<br \/>\nMeasuring cup\u00a0<br \/>\nPan\/s<br \/>\nWooden mixing spoons<\/p>\n<p>Ingredients:<br \/>\n10-12 small potatoes cut in half<br \/>\n3 good sized beets<br \/>\n8 halved carrots<br \/>\n1\/2 cup olive oil<br \/>\n1 tablespoon fresh thyme<br \/>\n1 tablespoon fresh rosemary<br \/>\n1 tablespoon fresh parsley<br \/>\n1 tablespoon fresh sage<br \/>\nSalt and pepper to taste<br \/>\n1\/4 cup of softened butter, a goat butter works also, or Earth Balance is perfect.<br \/>\n1 teaspoon honey<br \/>\nHalf an onion cut into chunks.<\/p>\n<p>Preheat the oven to 425 in a standard oven, or if like me you cook in a wood burning oven, around 425. Finely chop all the herbs. Put the sage to the side with the butter and honey. Chop all root vegetables and the onion into chunks. Halve the carrots the long way, same with the small potatoes. Cut the beets and onion into chunks. Put them into a medium sized bowl. Add the herbs except the sage. Add the salt and pepper, and olive oil. Mix till root vegetables are coated. Pour onto a roast pan or a cast iron skillet and put it in the oven. In a standard oven, it should take about 40ish minutes to cook. Stir it every 10 to 12 minutes. Make sure not to over pack the pan. Get a second one if you need one. This is the best method to create the caramelization necessary for this lovely side dish. While the root vegetables are in the oven, pour a quarter cup butter into a bowl and add to it the honey and the finely chopped sage. Add salt and pepper to taste, unless the butter is salted in which case go easy or not at all with the salt. When the root vegetables come out of the oven, pour a quarter cup of the sage butter on top and mix it in. Serve hot with your choice of maine dishes. No reason it can&#8217;t go well with steak, or chicken, or anything else that might interest you as a protein source.\u00a0<\/p>\n<p>Beets are great for dilating blood vessels for better circulation. They contain betalains a unique pigment that fights inflammation. Full of amazing nutrients, B9, Vitamin C, Manganese, iron, potassium, Fights brain degeneration related to age. In addition they are fairly high in fiber offering a secondary method of fighting inflammation. To name a few of the great things Beets do for our bodies.\u00a0<\/p>\n<p>Carrots, boost the immune system, and are great for the heart. They also contain slightly higher quantities of fiber. In addition they do good things for eye health and eyesight.<\/p>\n<p>Potatoes are great when you want to feel full. They contain fiber, are good for the heart, lower blood pressure, and still have even more great benefits.<\/p>\n<p>Onions fight osteoporosis, boos insulin production and help stabilize blood sugar. Quercetin and vitamin C act as antivirals. They contain a very nice variety of prebiotic fibers which do good things for the gut. They also lower cholesterol for better heart health and blood pressure, due to sulfur compounds, and antioxidants along with a few other things.\u00a0<\/p>\n<p>Parsley gives us among other things good bone health, heart support, and kidney health. Contains an astonishing amount of vitamin K. Also Vitamins A and C.\u00a0<\/p>\n<p>Rosemary promotes hair growth, and helps with memory. It helps with blood sugar levels. Cineole is what works on memory, it acts as a cognitive stimulant when inhaled. Carnosic and rosemarinic acids offer antioxidant anti inflammatory properties that impact the brain for the better. Rosemary improves skin health. It also lowers cortisol helping with relaxation. Rosemary, is a powerful GRAS herb, with still even more benefits.<\/p>\n<p>Thyme can help with menstrual cramps. It offers immune system support, respiratory relief, and contains vitamins A, C, and K. Natural antimicrobial agents contained in Thyme help fight off viruses. It also offers Thymol and carvacrol both antioxidants that do good things in the body. Thyme can be used as an expectorant to treat sore throats and coughs. Thyme, is a powerful little GRAS herb. One of my favorites.<\/p>\n<p>Sage can act as menopause support, reducing hot flashes. It impacts the brain helping it to stay healthy protecting the brains of the elderly in particular. It&#8217;s antimicrobial properties help prevent cavities from forming. Sage eases intestinal muscles leading to less bloat and better digestion. It reduces inflammation with it&#8217;s polyphenols and rosemarinic acid. It lowers LDL and raises HDL. These are only some of it&#8217;s benefits.\u00a0<\/p>\n<p>So this little side dish has a huge amount to offer when it comes to promoting health and well being. Which is why I guess I have been craving food like this lately when I feel so overwhelmed and a bit run down by life.\u00a0<\/p>\n<p>Well, I hope this food makes you feel as good as it made me feel tonight. I felt lucky to have root vegetables on hand and easily available. Root vegies tend to be some of my favorites. One thing I love about them is how well they tend to store, which makes them that much easier to have on hand.\u00a0<\/p>\n<p>What we consume impacts us often in ways we don&#8217;t consider. This holds true for the food we eat as well as the services and material from them we consume.
